Apple Mash

INGREDIENTS:

1 pound cooking apples
2 pounds potatoes
1 tablespoon sugar
2 ounces butter

PREPARATION:
Peel potatoes. Cook in salted, boiling water. Meanwhile peel, core, and
slice apples. Place in a pot with a tablespoon of water, and the sugar.
Cook until soft. When the potatoes are cooked, drain and mash thoroughly.

A shepherd’s pie recipe with beef.

INGREDIENTS:

2 cups cooked chopped meat
1 tablespoon finely chopped onion
2 cups gravy
salt and pepper
2 cups mashed potato, prepared with milk and seasonings as desired
salt and pepper
1/8 teaspoon paprika
1 tablespoon butter

Corn Fritters

CORN FRITTERS
1 1/2 c sifted flour
2 tsp baking powder
1/2 tsp salt
1/2 c milk
1 c cooked corn
2 eggs, beaten
6 tbsp. melted butter
Sift together the dry ingredients, add the beaten eggs with milk. Mix thoroughly.
Add melted butter and corn, and mix. Drop by tablespoonfuls on slightly
greased hot griddle. Brown on each side.
