Chili

1 Tbsp canola oil
1 onion, diced
2 zucchini, diced
1 cup Organic sweet Corn
3 cloves garlic, minced
2 lbs. natural ground beef
2 (28 oz.) cans of diced Tomatoes
2 Tbsp tomato paste
1 (15 oz.) can Organic Black or Kidney Beans
3 Tbsp chili powder
Pinch of cayenne (optional)
Juice of one lime
1 ½ tsp sea salt
1 bunch fresh cilantro, diced
1 (8 oz.) package cheddar cheese, shredded
1 (8 oz.) cup sour cream
1 avocado, diced
Organic Blue Corn Tortilla Chips

1. Heat a large soup pot over medium heat.

2. Add oil, onion, zucchini, corn and garlic, sauté for 5 minutes or until soft.

3. Add ground beef; cook until brown.

4. Add tomatoes, tomato paste, beans, chili powder, cayenne, lime juice and salt.

5. Simmer 45 minutes, stirring occasionally.

6. Garnish with cilantro, cheese, sour cream, avocado and tortilla chips.

Serves 4
