Vegetable Couscous

Ingredients

One 5.9 oz box quick-cooking couscous (parmesan flavored, if available)
1 1/4 cups water
2 teaspoons butter or olive oil
One 14 1/2 oz can petite-cut diced tomatoes
3 oz sliced black olives
4 oz canned artichoke hearts, chopped
1/2 cup diced, cooked chicken breast

Method

Combine water and butter or olive oil in large saucepan. Add flavor packet from the couscous, if desired. Add tomatoes, olives, artichokes and chicken. Bring to slow boil. Stir in couscous. Cover and let stand 5 minutes. Fluff with fork and serve.

Skip chicken for a vegetarian alternative. Add more water if too dry or let sit longer, if too soupy.

  1. I’ll have to try this one. My girlfriend and I are trying to eat more vegetarian, and good recipes are hard to find.
